There is no record of peppers in the Ming Dynasty medicine St. Li Shizhen's "Compendium of Herbal Medicine", because the peppers were brought from the Americas to Europe by Columbus nearly 100 years before they were introduced to China. When peppers were first introduced to China after 1591, they were only used as ornamental flowers and were not eaten. The peppers were most likely to arrive on the Macau Peninsula by sea through Portuguese merchants, then spread to the Chinese coast, and gradually spread inland and west. It arrived in Hunan and Sichuan in 1684 and spread to other parts of China. Until today, many parts of China also refer to peppers as "sea peppers", which indirectly confirm that peppers came from the sea. After the peppers arrived in coastal areas of China, they were not immediately accepted as ingredients. It was not until the end of the Ming Dynasty (1644), when natural disasters and war caused food shortages, that peppers really entered the Chinese recipe. According to historical records, the first to eat peppers was Guizhou, and several other provinces were later recorded to eat spicy food.
